Coconut Banana Coffee Cake

This little beauty was given to me from a sweet lady at work; and it is YUMMY!
And I'm not a big banana bread fan - this baby changed my mind!
It's banana bread texture with caramelized coconut on top! 


Preheat oven to 375
Grease 9X 13 pan

Cream together:
1/2 cup butter
1/2 cup shortening (butter flavor Crisco sticks anyone?)
1 1/2 cups sugar
Mix in:
2 eggs
3 mashed ripe speckled but not brown bananas
1 tsp vanilla
5 T milk
2 cups flour 
1 tsp baking soda 

On stovetop on med heat :
1/2 cup margarine
3/4 cup brown sugar
stir till melted
fold in 7 ounces of large flaked coconut - called coconut chips
Add nuts if desired  (I never do)
Pour over cake batter evenly
Bake at 375 for 30-35 min
Check cake for done-ness
