This recipe is so moist and rich it's almost like cake! It's good enough on it's own but you can add milk, or fruit or maple syrup or anything like you do for regular oatmeal. Use regular or quick oats depending on your texture preference.
6 cups oatmeal
2 cups brown sugar
1 cup oil
2 cups milk
4 beaten eggs
1 T baking powder
2 tsp salt
2 tsp Cinnamon (optional)
Preheat oven to 350 degrees. Mix all ingredients together and pour into a greased 9X13-inch baking pan. Batter is pretty "soupy." Bake for 25-35 minutes, until a toothpick inserted in the center comes out clean and it is set.
Serve warm with milk or raisins, dates, maple syrup, fresfruit etc. You can add fruit to the batter before baking too.
You can halve the recipe and bake it in an 8X8-inch pan, I also freeze portion sizes in freezer bags for a quick hearty breakfast.
I love to cook, it's how I de-stress; most people don't understand it but they love to taste test! I turn on some great tunes, and get to baking. Here's my family blog, come see what we're up to at http://kelleybroadbent.blogspot.com/ I'm also big into couponing and can help you save a lot of money here: http://savingsanityandcents.blogspot.com/ Thanks for visiting my little corner of the Web :)
