Baked Oatmeal
This recipe is so moist and rich it's almost like cake! It's good enough on it's own but you can add milk, or fruit or maple syrup or anything like you do for regular oatmeal. Use regular or quick oats depending on your texture preference.
6 cups oatmeal
2 cups brown sugar
1 cup oil
2 cups milk
4 beaten eggs
1 T baking powder
2 tsp salt
2 tsp Cinnamon (optional)
Dash Nutmeg
Preheat oven to 350 degrees. Mix all ingredients together and pour into a greased 9X13-inch baking pan. Batter is pretty "soupy." Bake for 25-35 minutes, until a toothpick inserted in the center comes out clean and it is set.
Serve warm with milk or raisins, dates, maple syrup, fresfruit etc. You can add fruit to the batter before baking too.
You can halve the recipe and bake it in an 8X8-inch pan, I also freeze portion sizes in freezer bags for a quick hearty breakfast.
This looks wonderful. I have a recipe similar but with fruit added in before baking. I'd like to try yours soon!
ReplyDeleteI am trying this...I LOVE oatmeal. Although, I am finding I happen to LOVE everything you bake and cook. WOW!! I am easy when it comes to food. ;)
ReplyDeleteHow do you reheat it when it's frozen? and how long does it take? Do you just put it on a plate and set the microwave on til it's hot, or do you have to put it in defrost mode? :/
ReplyDeleteReheat for 1.5 minutes on a plate on high is fine, till it's as hot as you like, easy peasy!
